Citrus Trout with Coriander
For 2 2 medium trout fillets 1 tbsp Coconut oil 1tbsp chopped fresh coriander leaves 1 tsp chopped fresh chives Juice of freshly squeezed lemon Juice of 1⁄2 large orange Fresh ground black pepper Method Heat the coconut oil in a pan and saute the trout fillets for a minute or so each side. Serve the fillets onto a warm plate. Into the same pan add the coriander to the coconut oil, stir in the lemon juice and orange juice and heat gently for a few seconds. Pour the sauce over the fish and season with black pepper. Serve.
